The cuisine of Northern people is considered boring and monotonous. I admit, some truth to that, but it is not less true that for us the same Scandinavian cuisine is much closer than Spanish or Greek, since our latitude is similar.
To me, the lack of attention to the cuisine of those countries where a lot of the time there is snow, due to the fact that the grapes under the snow as it is not growing. So, and autochthonous wines in these countries does not happen.
But on the anniversary gave me a bottle of Absolut. There really had nowhere to go – another invitation friends got buffet lunch. Since the main ingredients of the Swedish food – salted fish, meat, fresh and pickled vegetables, and begged the neighbors to vodka.
Let’s start with dishes resembling our vinaigrette, but the taste perhaps even better combined with the scalding drink. Prepare herring salad in Swedish. Herring cut into fillets (do not mess with the split, much less chopped into pieces and drenched unclear than fish), then into thin strips. The beets and the potatoes boil, cut into cubes, finely chop onion. Marinated (pickled, salty – this is a purely Slavic invention) cucumbers cut into cubes smaller, so do the eggs. In most Swedish of dishes is cut the fennel. There you have it – it’s great, no – replace the dill. All cut up? Nice, now make the sour cream dressing (I know, I know that sour cream is also purely Slavic product, but you got a very thick cream?). Mix low-fat sour cream, lemon juice, crushed garlic, a little honey, salt and black pepper. Only a good long mix to filling was homogeneous. Pour, mix up the salad.
Don’t know about you, but I found it very interesting the idea of using honey in the dressing, and I began to look for more recipes with it. And found. Cucumber in Swedish. Cut into thin circles, sprinkle with salt and leave to bleed out juice for half an hour. Meanwhile mix 1 part honey, 1 water, 2 parts fennel (or, as you remember, dill) and 4 parts white wine vinegar. Gently squeeze the cucumbers, rinse the salt, pour this dressing, gently stir to soak, spread on a plate and pour the remaining dressing. Though vodka, though so is a wonderful appetizer.
What, time to move on to something more substantial. Agree. Prepare a legendary dish – “Janson’s Temptation”. Note, by the way, the attention – often food is associated with someone’s culinary experience. Let us recall the equally legendary “the Delight of Imam” from the other end of Europe… Who is Janson, we shall never know, but to share his delight. So, cut the potatoes thin strips. In the form put a layer potato – herring fillet pieces – the bow, repeat 2 times + 1 more layer of potatoes. Already folded? Well and hustled. Back disassemble and pepper each layer, only in moderation. Next sprinkle on top casserole with crushed crackers and melted butter. And in the oven it for half an hour at 250 degrees. Then pour the hot cream – and still for 15 minutes. Ready, ecosites.
